Quinoa Salad with Tahini Dressing

Raise your hand if you could eat quinoa every day?? Now raise your hand if you actually do eat quinoa every day???? Guilty as charged.Lucky for you we will have a steady flow of spiced quinoa recipes ready to go, so you never have to worry about missing out on this fine ancient grain. 

This is a super light but very filling dish, packed with plant based protein and nutrients, not to mention a killa dressing! 

INGREDIENTS

  • 1 Packet of Satvik Quinoa Salad
  • 2 large Carrots, grated
  • 2 Lebanese Cucumbers, grated
  • 1 Jar Kalamata Olives
  • 2 Large Tomatoes, diced
  • half cup sunflower seeds, toasted

Dressing

  • 2 tbsp Tahini
  • Juice of half Lemon
  • 1 tsp grated Ginger
  • 1/2 tsp Grated Garlic
  • 1 tbsp Soy Sauce
  • 1 tbsp Agave Syrup
  • 2 tbsp Olive Oil
  • 1/2 cup water

INSTRUCTIONS

  1. Cook Satvik Quinoa Salad per packet instructions. Let cool
    Toss through your vegetables and half the toasted sesame seeds. Season with Salt and Pepper
  2. To make your dressing simply put all of your ingredients into a clean jar with a lid and shake vigorously until well combined
  3. Dress your salad right before spooning into your bread wraps. Top with remaining Toasted Sunflower seeds
