A vegan meal-in-one, this vegetable Pakora and Red Lentil Dhal will keep you full for hours while also nourishing your body with plants! The perfect comforting meal for a weeknight dinner or easy lunch.
INGREDIENTS
- 1 packet Satvik Red Lentil Dhal

3 large potatoes

1 head of broccoli

2 tomatoes, diced

1 cup Besan (chickpea) flour

1/2 tsp turmeric

1/2 tsp curry powder

1 garlic clove, crushed

Salt & Pepper

3/4 cup water

Poppadoms
-
1/4 cup oil
INSTRUCTIONS
- Cook Satvik Red Lentil Dhal as per packet instructions
- Meanwhile, preheat your oven 200 degrees

Peel potatoes and cut thick 2cm slicesWash and separate your head of broccoli into chunky floretsFill a medium sized pot with cold salted water. Place your potatoes into the cold water and place over a high heat. Once the pot has come to a complete boil, add broccoli and immediately cover and turn off heat (this method should allow perfect al dente vegetables without over cooking)
- To make your batter, whisk together your flour, spices, garlic and water. whisk by hand our electric for 2 minutes to aerate, this will make your batter crisp up during cooking

Drain your vegetables well and lay on a clean dry tea towel to absorb moisture.Line a bake tray with non-stick baking paper. Drizzle with oil. Dip your vegetables into your pakora batter and place onto your bake tray. Drizzle with a generous amount of oil and place into a hot oven. Bake until golden and crispy. You can turn your vegetables and bake another 5 minutes for extra crisp
Serve hot with Dhal and Poppadoms
