Cook time:
Total time: 50 mins

Serves: 10 toasties
Ingredients
  • 1 pack of Satvik Green Moong Dhal
  • 2 medium tomatoes, diced
  • 2 Tbsp Olive Oil
  • 1 Red Capsicum, cut into stripes
  • 1 ripe avocado,
  • 1 loaf of good quality sourdough, sliced thickly and toasted
  • Salt & Pepper to taste
  • Garden fresh leafy herbs to finish - try parsley, spring onions or basil
  • or your favourite herby sauce - pesto, zhoug sauce (spicy cilantro)
Instructions
  • Prepare Satvik Foods Green Moong Dhal according to packet instructions - except reduce the specified amount of water from 4 cups to 3 cups. We need a thicker consistency then a traditional Dhal to make our toastie toppings:
    • Add 1 Tbsp oil to medium pot. Pour in pack of Green Moong Dhal and sauté over high heat for 1 minute, stirring constantly. Add diced tomatoes and sauté until aroma released. Add 3 cups of water and cover to simmer on low heat for 40 minutes or until grains soft and consistency is thick. Turn off and let sit with lid on.
  • Meanwhile lightly grill capsicum with a little olive oil over high heat. You can do this in a hot pan, or in the grill section of your oven.
  • On freshly toasted sough dough, pile on your Green Moong mix, top with capsicum and sliced avocado. Garnish with fresh herbs and good grind of salt and pepper
  • Enjoy!
